The 7th day streak bonus gives you a very high chance of obtaining one of the respective evolution items, but it’s more than likely not guaranteed.

There’s no way to ensure that a Metal Coat will drop, so your best bet is to keep spinning Pokéstops or obtain one from Research task. Certain Field Research tasks in Pokémon GO hand out the Metal Coat as a reward upon completion.
